Air Fryer Quesadilla (Easy Recipe)
These crispy air fryer quesadillas come together in under 10 minutes and are totally customizable. Perfect for lunch, dinner, or a cheesy snack—no skillet required!

- 2 flour tortillas
- ½ cup shredded cheddar or Mexican blend cheese divided
- ⅓ cup cooked shredded chicken
- ¼ cup fresh spinach chopped
- Optional toppings- red bell pepper red onion, mushrooms, corn, black beans, jalapeños, tomatoes, etc. Can also use 1/2 cup of my Southwest Chicken Salad Recipe *** LINK as the filling.
Preheat your air fryer to 350°F.
Lightly spray one side of both tortillas cooking spray.
Place one tortilla oil-side down in the air fryer basket. Then layer ¼ cup of cheese evenly on the tortilla, followed by the chicken and spinach. Top with the remaining ¼ cup of cheese.
Place the second tortilla oil-side up on top to create a sandwich.
Air fry for 8 minutes, flipping carefully halfway through, until both sides are golden brown and crispy.
Let cool slightly, then slice into wedges and serve with guacamole, salsa, or a dollop of sour cream or Greek yogurt.
