- 2 cups gluten-free rolled oats 1 cup blended into flour
- 1 tsp baking powder
- 2 scoops vanilla protein powder
- ½ tsp salt
- 1 tsp cinnamon
- 1 cup unsweetened almond milk
- 2 eggs
- ½ cup melted butter
- ¼ cup maple syrup
- 2 tsp vanilla extract
- ¾ cup dark chocolate chips
Heat your oven to 350°F and grease an 8x8 inch baking dish.
In a large bowl, combine rolled oats, blended oat flour, baking powder, protein powder, salt, and cinnamon.
In a separate bowl, whisk together almond milk, eggs, melted butter, maple syrup, and vanilla extract.
Stir the dry ingredients into the wet ingredients until well combined. Then, gently fold in chocolate chips (save a handful for topping!).
Pour the mixture into your prepared baking dish and top with extra chocolate chips. Bake for 30-35 minutes until the edges are golden and the center is set.
Allow to cool for 5-10 minutes before slicing. Serve warm or store for later!
