Chocolate Chip Baked Oatmeal (Protein Recipe)

Ingredients

  • 2 cups gluten-free rolled oats 1 cup blended into flour
  • 1 tsp baking powder
  • 2 scoops vanilla protein powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 cup unsweetened almond milk
  • 2 eggs
  • ½ cup melted butter
  • ¼ cup maple syrup
  • 2 tsp vanilla extract
  • ¾ cup dark chocolate chips

Instructions

  • Heat your oven to 350°F and grease an 8x8 inch baking dish.
  • In a large bowl, combine rolled oats, blended oat flour, baking powder, protein powder, salt, and cinnamon.
  • In a separate bowl, whisk together almond milk, eggs, melted butter, maple syrup, and vanilla extract.
  • Stir the dry ingredients into the wet ingredients until well combined. Then, gently fold in chocolate chips (save a handful for topping!).
  • Pour the mixture into your prepared baking dish and top with extra chocolate chips. Bake for 30-35 minutes until the edges are golden and the center is set.
  • Allow to cool for 5-10 minutes before slicing. Serve warm or store for later!
