In a large bowl, mix together the gluten-free all purpose flour, baking powder, vanilla protein powder, salt, and cinnamon until well combined.
In a separate bowl, mash the banana then add in greek yogurt, vanilla extract, and maple syrup.
Add dry ingredients to wet ingredients, and mix until bagel dough forms.
Add chocolate chips to the bagel dough and mix them in. Divide dough into 3 equal pieces and shape each piece into a smooth dough ball on a lightly floured work surface.
Roll each ball of dough until it becomes a rope, making it as smooth and even as possible. Pinch the ends together to form a circular shape, creating a bagel shape. Add more chocolate chips to the top of the dough and press down firmly.
Preheat air fryer for 5 minutes at 350 degrees F. Then brush the bagels with egg wash or spray with non-stick spray. You can also add some flakey sea salt to the tops of the bagels as well if desired.
Air fry for 15-20 or until golden brown. Serve warm with toppings of your choice.
