- 2 cups gluten free quick oats
- ½ cup almonds
- ½ cup flaxseed meal
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- ½ cup grass fed butter (or ghee) melted
- ½ cup honey
- 1 tsp vanilla
- ⅓ cup dark chocolate chips
Preheat oven to 300F. Line a baking sheet with parchment paper and set aside.
In a medium size bowl, mix together oats, nuts, flaxseed, cinnamon, nutmeg, and salt.
Add the melted coconut oil, honey and vanilla to same bowl and combine well.
Spread out on a lined baking sheet and bake for 45-50 minutes, mixing once or twice.
Let cool for one hour. This is a very important step, as this is when the granola will get a crunchy texture.
Add the dark chocolate chips and ENJOY!
Make it Vegan – Swap the butter for coconut oil and use maple syrup instead of honey.
Storage – Keep crispy in an airtight container in the fridge for up to 2 weeks or freezer for up to 3 months.
