Chocolate Chip Oatmeal Cookie Granola

This Chocolate Chip Oatmeal Cookie Granola is a great recipe when you're craving oatmeal chocolate chip cookies for breakfast. Made in just a few minutes, this crispy homemade granola recipe is made with simple ingredients that you probably already have on hand!

Ingredients

  • 2 cups gluten free quick oats
  • ½ cup almonds
  • ½ cup flaxseed meal
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup grass fed butter melted
  • ½ cup honey
  • 1 tsp vanilla
  • cup dark chocolate chips

Instructions

  • Preheat oven to 300F. Line a baking sheet with parchment paper and set aside.
  • In a medium size bowl, mix together oats, nuts, flaxseed, cinnamon, nutmeg, and salt.
  • Add the melted coconut oil, honey and vanilla to same bowl and combine well.
  • Spread out on a lined baking sheet and bake for 45-50 minutes, mixing once or twice. 
  • Let cool for one hour. This is a very important step, as this is when the granola will get it's crunchy texture.
  • Add the dark chocolate chips and ENJOY!

Notes

Can use coconut oil or ghee in place of butter.
Can use maple syrup instead of honey.
