Chocolate Chip Oatmeal Cookie Granola

This chocolate chip oatmeal cookie granola tastes like you turned an oatmeal chocolate chip cookie into breakfast — made with oats, butter, honey, and dark chocolate chips, baked into the crunchiest golden clusters.

Ingredients

  • 2 cups gluten free quick oats
  • ½ cup almonds
  • ½ cup flaxseed meal
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup grass fed butter (or ghee) melted
  • ½ cup honey
  • 1 tsp vanilla
  • cup dark chocolate chips

Instructions

  • Preheat oven to 300F. Line a baking sheet with parchment paper and set aside.
  • In a medium size bowl, mix together oats, nuts, flaxseed, cinnamon, nutmeg, and salt.
  • Add the melted coconut oil, honey and vanilla to same bowl and combine well.
  • Spread out on a lined baking sheet and bake for 45-50 minutes, mixing once or twice. 
  • Let cool for one hour. This is a very important step, as this is when the granola will get a crunchy texture.
  • Add the dark chocolate chips and ENJOY!

Notes

Make it Vegan – Swap the butter for coconut oil and use maple syrup instead of honey.
Storage – Keep crispy in an airtight container in the fridge for up to 2 weeks or freezer for up to 3 months.
