Chocolate Covered Dates With Peanut Butter

Ingredients

  • 4 Medjool dates
  • 2-4 tsp peanut butter
  • 1 tbsp crushed peanuts
  • cup dark chocolate chips
  • ½ tsp coconut oil
  • Coarse flaky sea salt

Instructions

  • Slice each date lengthwise to create an opening and remove the pit. Ensure the dates remain intact, forming a pocket for the filling.
  • Spoon approximately 1/2 teaspoon of peanut butter into the center of each date. Adjust the amount to your liking but avoid overfilling to prevent the dates from splitting. Then add the chopped peanuts to the top of the peanut butter.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second increments, stirring after each, until the chocolate is completely melted and smooth.
  • Using a fork or dipping tool, carefully dip each stuffed date into the melted chocolate, ensuring it is fully coated. Let the excess chocolate drip off before placing the coated dates onto a parchment-lined baking sheet.
  • Sprinkle a pinch of flaky sea salt over the chocolate coating while it's still wet.
  • Freeze for 15–20 minutes or until the chocolate has hardened. Once set, transfer the dates to an airtight container and store in the freezer or refrigerator.
