These Christmas Crack Cookies are the ultimate sweet and salty holiday treat! With layers of caramel, chocolate, and crunchy crackers, you won’t be able to stop at one bite!

Ingredients

  • ½ cup butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 1 ½ cups gluten-free all purpose flour
  • ¼ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 1 cup saltine crackers crushed
  • 1 cup toffee bits
  • 1 cup semi-sweet chocolate chips

Instructions

  • Start by preheating your oven to 350 degrees F and lining a baking sheet with parchment paper. In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy.
  • Toss in your vanilla extract and the egg, and mix until everything is well combined. 
  • In a separate bowl, whisk together the gluten-free flour, baking powder, baking soda, and sea salt. Slowly add this dry mix to the wet ingredients, stirring until everything is combined and you’ve got that perfect cookie dough consistency.
  • Fold in your saltine cracker pieces, toffee bits and chocolate chips. 
  • Bake for 8-11 minutes, or until the edges are golden and the center is just set. 
  • Your cookies should be a little chewy with crispy edges, loaded with melty chocolate, and every bite will give you that perfect combo of salty-sweet goodness. Like classic Christmas crack, but in cookie form.
