Cinnamon Roll Baked Oatmeal

Ingredients

FOR OATS

  • ½ cup certified gluten free oats
  • ½ banana
  • 1 tbsp maple syrup
  • 1 scoop vanilla protein powder
  • ½ tsp cinnamon
  • cup almond milk
  • 1 tsp baking powder
  • ¼ tsp vanilla extract

FOR CINNAMON SWIRL

  • 1 tsp coconut sugar
  • ½ tsp cinnamon

FOR ICING

  • 1 tbsp cream cheese
  • 1 tbsp plain greek yogurt
  • 1 tsp powdered sugar

Instructions

  • In a high speed blender, blend the oats until they turn into a fine flour.
  • Then add the banana, maple syrup, protein powder, cinnamon, almond milk, baking powder, and vanilla extract in blender and blend on high. Pour into a greased oven safe dish and swirl in the coconut sugar/cinnamon mixture in circles.
  • Bake at 350F for 22-25 minutes.
  • Once cooled slightly, top with icing and enjoy!
