- 3 ½ cups certified gluten-free quick oats divided
- ¾ cup coconut flakes
- 2 tbsp brown sugar
- ½ cup sugar-free maple syrup
- ½ cup coconut oil
- ½ cup cashew butter
- ¾ cup mini chocolate chips
Line a bread loaf pan with parchment paper and set aside.
Using a high-powered blender, blend 1 1/2 cups of your oats on high to create a fine oat flour.
Combine all wet and dry ingredients except chocolate chips to a large bowl.
Fold in chocolate chips using a rubber spatula.
Add mixture to the prepared bread loaf pan and press down firmly.
Put in refrigerator to set for 1-2 hours. Can speed up the process by adding to the freezer for 20 minutes or until they are firm.
Cut into bite size squares and store in the fridge for up to 5-7 days.
