Ingredients

  • 3 ½ cups certified gluten-free quick oats divided
  • ¾ cup coconut flakes
  • 2 tbsp brown sugar
  • ½ cup sugar-free maple syrup
  • ½ cup coconut oil
  • ½ cup cashew butter
  • ¾ cup mini chocolate chips

Instructions

  • Line a bread loaf pan with parchment paper and set aside.
  • Using a high-powered blender, blend 1 1/2 cups of your oats on high to create a fine oat flour.
  • Combine all wet and dry ingredients except chocolate chips to a large bowl.
  • Fold in chocolate chips using a rubber spatula.
  • Add mixture to the prepared bread loaf pan and press down firmly.
  • Put in refrigerator to set for 1-2 hours. Can speed up the process by adding to the freezer for 20 minutes or until they are firm.
  • Cut into bite size squares and store in the fridge for up to 5-7 days.
