Crispy Cheese Crusted Eggs (High Protein Breakfast in 15 Minutes)

Crispy cheese crusted eggs are hard boiled eggs cooked face-down on melted cheese until golden and crunchy. A high protein breakfast ready in 15 minutes.

Ingredients

  • 2 large eggs
  • oil or butter
  • 1 oz shredded cheese mozzarella is my preferred cheese
  • salt and black pepper

Instructions

  • Hard boil your eggs. Bring a pot of water to a boil, add eggs, and cook for 7 minutes. Transfer immediately to an ice bath to stop cooking. Peel and slice in half lengthwise.
  • Heat the pan. Warm a non-stick skillet over medium heat and add a small amount of oil or butter.
  • Add the cheese. Sprinkle shredded cheese directly into the pan in small piles roughly the size of each egg half. Let it melt for about 30 seconds until it starts to bubble.
  • Place eggs face-down. Season the cut sides of the eggs with salt and pepper, then press each half cut-side down onto a cheese pile.
  • Cook until crispy. Cook undisturbed for 2–3 minutes until the cheese turns golden brown and pulls away from the pan cleanly. Carefully lift each egg with a spatula — the cheese crust should come with it.
  • Serve immediately. Cheese crust side up so you can see it. Top with whatever sounds good.
