PUPCAKES
- 1 cup all-purpose flour can also use whole wheat if preferred
- ½ tsp baking soda
- ½ cup natural peanut butter ensure this only contains peanuts and there is no xylitol (toxic to dogs)
- ½ cup pure pumpkin puree not pumpkin pie filling (also toxic to dogs)
- ½ cup unsweetened apple sauce
- 1 large egg
FROSTING
- ¾ cup plain greek yogurt
- ⅓ cup peanut butter
Heat the oven to 350°F and line a muffin tin with 8 cupcake liners or lightly grease it.
In a large mixing bowl, combine the flour and baking soda. In a separate bowl, mix together the melted peanut butter, pumpkin puree, applesauce, and egg until smooth.
Slowly add the wet mixture to the dry ingredients and stir until it’s all mixed together. The batter should be thick but smooth.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Pop those cupcakes in the oven and bake for 18-22 minutes, or until a toothpick comes out clean. Let the cupcakes cool completely before frosting.
If you really want to go all out, mix together the Greek yogurt and peanut butter for a simple, dog-friendly frosting. Once the cupcakes are cool, frost away! Add a dog treat or sprinkle on top for some extra flair.
