FOR FRIES
- 2 russet potatoes
- olive oil or avocado oil spray
- salt + pepper
- 2 tbsp black truffle oil
- ⅓ cup freshly grated parmesan cheese
- truffle salt + fresh parsley optional
FOR GARLIC AIOLI
- ¼ cup light mayonaise
- ½ tbsp lemon juice
- 1 tsp minced garlic
- salt + pepper
Slice raw potatoes in 1/2 inch long strips. Fill large bowl with cold water and add the potatoes for 20-30 minutes.
Make the garlic aioli by combining all the ingredients in a small bowl. Refrigerate for 30 minutes while getting the potatoes ready.
Pat the potatoes dry with paper towels. Season with salt and spray with olive oil spray.
Add potatoes to air fryer basket in a single layer and air fry at 375 degrees F for 17-20 minutes or until golden brown. You may need to cook them in multiple batches.
Toss the crispy fries with parmesan cheese, a little truffle oil, truffle salt for extra truffle flavor, and fresh parsley. Enjoy with garlic aioli dip or dip of choice.
