Easy Homemade Blueberry Bagel Recipe

- ⅔ cup gluten free all purpose flour I used Bob's Red Mill
- 1 tsp baking powder
- 1 scoop PEScience Gourmet Vanilla protein powder 30g
- ¼ tsp salt
- ½ tsp cinnamon
- ⅔ cup plain unsweetened greek yogurt
- ⅓ cup fresh or frozen blueberries
- 1 tbsp granulated monk fruit for topping
1. In a large bowl, mix together the gluten-free all purpose flour, baking powder, vanilla protein powder, salt, and cinnamon until well combined. Add in the greek yogurt and stir until bagel dough forms.
2. Add blueberries to the bagel dough and mix them in. Divide the dough into 2 equal pieces and shape each piece into a smooth dough ball on a lightly floured surface.
3. Roll each ball of dough until it becomes a rope, making it as smooth and even as possible. Pinch the ends together to form a circular shape, creating a bagel shape.
4. Preheat air fryer for 5 minutes at 350 degrees F. Then spray the greek yogurt bagels with cooking spray or olive oil.
5. Press in a few extra raisins to the top of the bagels and sprinkle with granulated monk fruit sweetener. Air fry for 8 minutes.
6. Flip them over and air fry for another 2-3 minutes, or until golden brown. Serve warm with toppings of your choice.
