Easy Homemade Blueberry Bagel Recipe

This Blueberry Bagel Recipe is a delicious and satisfying breakfast option that can be made right at home with just a few simple ingredients. These gluten free blueberry bagels are much better than anything you'd find at your local grocery store.

Ingredients

  • cup gluten free all purpose flour I used Bob's Red Mill
  • 1 tsp baking powder
  • 1 scoop PEScience Gourmet Vanilla protein powder 30g
  • ¼ tsp salt
  • ½ tsp cinnamon
  • cup plain unsweetened greek yogurt
  • cup fresh or frozen blueberries
  • 1 tbsp granulated monk fruit for topping

Instructions

  • 1. In a large bowl, mix together the gluten-free all purpose flour, baking powder, vanilla protein powder, salt, and cinnamon until well combined. Add in the greek yogurt and stir until bagel dough forms.
  • 2. Add blueberries to the bagel dough and mix them in. Divide the dough into 2 equal pieces and shape each piece into a smooth dough ball on a lightly floured surface.
  • 3. Roll each ball of dough until it becomes a rope, making it as smooth and even as possible. Pinch the ends together to form a circular shape, creating a bagel shape.
  • 4. Preheat air fryer for 5 minutes at 350 degrees F. Then spray the greek yogurt bagels with cooking spray or olive oil.
  • 5. Press in a few extra raisins to the top of the bagels and sprinkle with granulated monk fruit sweetener. Air fry for 8 minutes.
  • 6. Flip them over and air fry for another 2-3 minutes, or until golden brown. Serve warm with toppings of your choice.
