- 1000 g cubed watermelon approx 1/4 medium watermelon
- ⅓ cups chopped basil
- 200 g feta cheese one container cubed feta
- 2 tbsp honey
- 2 tbsp olive oil
- 2 tbsp lime juice
- salt + black pepper
Start by cutting your watermelon and feta into bite-sized cubes. Chop the fresh basil finely. It’s best to use fresh ingredients to get that vibrant, summery flavor.
In a large bowl, gently toss together the watermelon cubes, feta cheese and chopped basil. Be careful not to break up the feta too much; you want nice chunks in every bite.
Add a pinch of salt and black pepper to taste.
In a small bowl, whisk together the honey, lime juice, and olive oil. This dressing is light but adds just the right amount of sweetness and tang.
Drizzle the dressing over the salad and give everything a gentle toss to combine. Make sure all the pieces are lightly coated with that delicious dressing.
Transfer the salad to a serving bowl or platter. You can garnish with a few extra basil leaves if you want to make it look extra fancy.
