Frozen Protein S'mores Recipe (Birthday Cake)

These Frozen Protein S’mores are the ultimate high-protein treat made with graham crackers, Cool Whip, and birthday cake protein powder. Finished with sprinkles on the sides, they’re sweet, fun, and perfectly freezer-friendly!

Ingredients

  • 12 graham crackers
  • ½ cup white chocolate chips
  • ½ tsp coconut oil
  • 1 tub light cool whip
  • 1 ½ scoops 1UP Nutrition Birthday Cake protein powder 45g - use code BAILS at checkout to save 20%. See notes.
  • ¼ tsp almond extract

Instructions

  • Melt the chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  • Layer the grahams: Place half the graham crackers on a parchment-lined baking sheet. Spread a layer of melted chocolate on top of each cracker.
  • Freeze the base: Pop the tray in the freezer for 10–15 minutes until the chocolate is set.
  • Mix the filling: In a separate bowl, combine the Cool Whip, birthday cake protein powder and almond extract. Mix until completely smooth and fluffy.
  • Assemble the sandwiches: Remove the chocolate grahams from the freezer. Spoon the protein filling onto each one, then gently press a plain graham cracker on top to create a sandwich.
  • Decorate: Dip one corner or edge of each sandwich in more melted chocolate if desired, then dip into sprinkles for that birthday cake look. Alternatively can simply dunk the sides of the sandwich into more sprinkles.
  • Freeze again: Return the s’mores to the baking sheet and freeze for at least 1 hour or until fully firm.
  • Serve & store: Enjoy straight from the freezer! Store extras in an airtight container in the freezer for up to one week.
