Girl Kibble (Chicken and Peas)

A high-protein, high-fiber bowl of cooked chicken and green peas tossed with parmesan, olive oil, lemon, garlic powder, salt and pepper.

Ingredients

  • 1 cup frozen peas
  • 1 cup cooked chicken rotisserie chicken, air fried chicken, leftover chicken of choice, etc
  • ½ tbsp olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1-2 tbsp parmesan cheese grated

Instructions

  • Cook the peas. Microwave the frozen peas following the package directions, then drain.
  • Dice the chicken. Cut it into bite-size pieces close to the size of the peas so every spoonful gets both.
  • Dress it. Add the chicken and peas to a bowl, drizzle with olive oil and lemon juice, and toss until everything looks glossy.
  • Season it. Sprinkle in the garlic powder, salt, pepper and parmesan, then toss again until the parm coats every piece.
  • Taste and eat. Add another squeeze of lemon or pinch of salt if it needs it, then grab a spoon.

Try different variations like my chili onion crunch version with tajin, a tzatziki version with feta cheese, a bbq version with bbq sauce, cooked bacon bits, red onion, and shredded cheddar cheese, etc.
