Ingredients

  • 2 large chicken breasts shredded
  • Salt + black pepper
  • 1 cucumber diced
  • ½ pint cherry tomatoes halved
  • ½ red onion chopped
  • ½ cup kalamata olives
  • ¾ cup low fat feta cheese
  • ½ cup plain greek yogurt
  • 2 tbsp light mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp italian seasoning

Instructions

  • Season chicken breasts with salt, pepper, and a little Italian seasoning. Grill, bake, air fry, or pan-sear until cooked through, then let cool and slice or shred. Can also use pre-cooked chicken or rotisserie chicken.
  • Dice cucumber, cherry tomatoes, and red onion into bite-sized pieces.
  • In a small bowl, whisk together Greek yogurt, light mayo, red wine vinegar, garlic powder, onion powder, and Italian seasoning until smooth.
  • In a large bowl, combine chicken, veggies, olives, and feta cheese. Add the dressing and toss until everything is well coated.
  • Let the salad sit in the fridge for at least 15-20 minutes so the flavors can meld together. Then, dig in and enjoy!
