Healthy Starbucks Cranberry Bliss Bars (Copycat Recipe)

Ingredients

FOR BARS

  • 1 cup cashew butter
  • ½ cup maple syrup
  • 2 large eggs
  • 2 tsp vanilla extract
  • Zest from one large orange
  • 1 cup gluten-free oat flour
  • 1 cup almond flour
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 1 cup white chocolate chips
  • 1 cup dried cranberries

FOR CREAM CHEESE FROSTING

  • cup cream cheese
  • cup powdered sugar
  • ½ cup plain greek yogurt

Instructions

  • Preheat your oven to 325 degrees F and line a square 8x8" baking dish with parchment paper.
  • In a medium bowl combine the oat flour, almond flour, baking soda, and sea salt.
  • In a separate large bowl combine the cashew butter, maple syrup, eggs, vanilla extract and orange zest. 
  • Combine the dry ingredients into the wet ingredients, then add 2/3 cup dried cranberries and 2/3 cup white chocolate chips. Save remaining 1/3 of each for topping.
  • Add to prepared pan and bake for 20-25 minutes or until edges are golden brown.
  • While blondie batter is baking, make the sweet cream cheese frosting. Combine the cream cheese, powdered sugar and greek yogurt.
  • Allow bars to cool in pan, then add the cream cheese icing. Remove from pan and cut into 4 large squares. Then cut each square diagonally to make 8 triangles. 
  • Melt the remaining white chocolate chips in the microwave. Sprinkle the bars with the remaining dried cranberries and drizzle with the melted white chocolate. Enjoy!
