FOR BARS
- 1 cup cashew butter
- ½ cup maple syrup
- 2 large eggs
- 2 tsp vanilla extract
- Zest from one large orange
- 1 cup gluten-free oat flour
- 1 cup almond flour
- 1 tsp baking soda
- ½ tsp sea salt
- 1 cup white chocolate chips
- 1 cup dried cranberries
FOR CREAM CHEESE FROSTING
- ⅔ cup cream cheese
- ⅔ cup powdered sugar
- ½ cup plain greek yogurt
Preheat your oven to 325 degrees F and line a square 8x8" baking dish with parchment paper.
In a medium bowl combine the oat flour, almond flour, baking soda, and sea salt.
In a separate large bowl combine the cashew butter, maple syrup, eggs, vanilla extract and orange zest.
Combine the dry ingredients into the wet ingredients, then add 2/3 cup dried cranberries and 2/3 cup white chocolate chips. Save remaining 1/3 of each for topping.
Add to prepared pan and bake for 20-25 minutes or until edges are golden brown.
While blondie batter is baking, make the sweet cream cheese frosting. Combine the cream cheese, powdered sugar and greek yogurt.
Allow bars to cool in pan, then add the cream cheese icing. Remove from pan and cut into 4 large squares. Then cut each square diagonally to make 8 triangles.
Melt the remaining white chocolate chips in the microwave. Sprinkle the bars with the remaining dried cranberries and drizzle with the melted white chocolate. Enjoy!
