High Protein Copycat McChicken
A baked, gluten-free, high-protein copycat McChicken made with a seasoned ground chicken patty, the classic creamy McChicken sauce, and shredded lettuce. Crispy without frying.

FOR CHICKEN
- 500 g ground chicken
- 1 tsp salt & black pepper
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp chili powder
- ¼ tsp cayenne pepper
- 1 cup gluten-free breadcrumbs
- 1 tsp onion powder
- 1 tsp paprika
FOR MCCHICKEN SAUCE
- ⅓ cup light mayo
- ½ tsp mustard
- ½ tsp garlic powder
FOR TOPPINGS
- 4 gluten free buns
- 1 cup shredded lettuce
Preheat oven to 400F and line a baking sheet with parchment paper.
In a large bowl combine the ground chicken, salt, black pepper, onion powder, paprika, chili powder and cayenne. Form into 4 patties.
In a seperate shallow bowl combine the breadcrumb mixture. Add the panko breadcrumbs, onion powder, and paprika and mix well.
Coat each patty in the breadcrumb mixture. Place on prepared baking tray and spray with non-stick cooking spray.
Bake for 17-19 minutes then broil for 1-2 minutes to get it extra crispy. Watch carefully so they do not overcook.
Place the cooked patties on burger buns and top with homemade mcchicken sauce and shredded lettuce. Enjoy!
Air Fryer – Cook the patties preheated 375°F air fryer until cooked through and crispy, flipping halfway.
Storage – Store cooked patties in an airtight container in the fridge for up to 4 days, storing sauce, buns, and lettuce separately. Freeze the cooked or uncooked patties in a single layer, then transfer to a freezer bag for up to 3 months.
