  • 3 tbsp butter
  • 7 cups popcorn
  • 1 tsp vanilla extract
  • 1 scoop cake batter protein powder
  • 50 regular size marshmallows
  • Funfetti sprinkles

Instructions

  • Start by popping your popcorn kernels using your preferred method. Whether you opt for the stovetop, microwave, or air popper, just make sure you have about 6-7 cups of popped popcorn ready to go.
  • In a large saucepan, melt some butter over low heat. Once melted, add in the marshmallows and stir until they're completely melted and smooth.
  • Remove the marshmallow mixture from the heat and stir in a splash of vanilla extract for extra flavor. Then add the protein powder and pour the melted marshmallow mixture over the popcorn and gently toss until all the popcorn is evenly coated.
  • Now comes the fun part—adding the sprinkles! Sprinkle them over the popcorn mixture and give it a final toss to distribute the sprinkles evenly throughout.
  • Transfer the popcorn mixture to a parchment-lined baking dish or sheet pan. Using a spatula or your hands (lightly coated with cooking spray to prevent sticking), press the mixture firmly into the pan to shape it into a flat, even layer.
  • If desired, melt white chocolate then drizzle it over the top of the treats for an extra special touch. Can add extra sprinkles on top as well.
  • Allow the treats to firm up for about 30 minutes at room temperature. Once cooled, cut them into squares or break them into clusters and get ready to enjoy a burst of fun and flavor in every bite!
