Ingredients

FOR CHICKEN

  • 500 g ground chicken
  • 1 tsp salt & black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • ¼ tsp cayenne pepper
  • 1 cup gluten-free breadcrumbs
  • 1 tsp onion powder
  • 1 tsp paprika

FOR MCCHICKEN SAUCE

  • cup light mayo
  • ½ tsp mustard
  • ½ tsp garlic powder

FOR TOPPINGS

  • 4 gluten free buns
  • 1 cup shredded lettuce

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • In a large bowl combine the ground chicken, salt, black pepper, onion powder, paprika, chili powder and cayenne. Form into 4 patties.
  • In a seperate shallow bowl combine the breadcrumb mixture. Add the panko breadcrumbs, onion powder, and paprika and mix well.
  • Coat each patty in the breadcrumb mixture. Place on prepared baking tray and spray with non-stick cooking spray.
  • Bake for 17-19 minutes then broil for 1-2 minutes to get it extra crispy. Watch carefully so they do not overcook.
  • Place the cooked patties on burger buns and top with homemade mcchicken sauce and shredded lettuce. Enjoy!
