Ingredients

  • 8 bell peppers
  • 1 medium red onion chopped
  • 600 g lean ground beef
  • 2-3 cloves garlic chopped
  • 1 medium zucchini diced
  • 650 ml pasta sauce
  • 1 tbsp Italian seasoning
  • 1 tsp cajun
  • 1 tsp paprika
  • salt + black pepper
  • 4 cups cooked white rice
  • 1 cup shredded mozzarella cheese divided

Instructions

  • Preheat your air fryer to 375°F (190°C).
  • Cut the peppers in half lengthwise, remove the seeds, and gently brush the outsides with olive oil. This step helps achieve a golden and slightly crispy exterior during air frying.
  • In a medium saucepan over medium heat, sautee the onion for 5-6 minutes. Then add in the garlic and cook ground meat until browned. Add in the diced zucchini, pasta sauce, and all seasonings.
  • In a large mixing bowl, combine the cooked meat mixture with cooked rice, and half of the shredded cheese. Mix well until all ingredients are evenly distributed.
  • Carefully stuff each bell pepper with the delicious mixture, pressing it down gently. Top each pepper with the remaining shredded cheese.
  • Place the stuffed peppers in the air fryer basket, ensuring they're stable and not touching each other. Air fry for 12-15 minutes, or until the peppers are tender and the cheese is melted and slightly golden.
