Preheat to 375°F for 2–3 minutes. Lower temperature than the panko shrimp — tempura batter is thinner and browns faster, and 400°F tends to over-brown the outside before the interior is fully cooked. 375°F is the sweet spot.
Arrange in a single layer in the air fryer basket with space between each shrimp. Don't stack or overlap — even a light tempura batter needs airflow on all sides to crisp evenly. Work in batches if needed.
Do NOT add oil spray. This is the key difference from the panko shrimp. The tempura batter already contains fat and adding cooking spray can make the outside greasy rather than crispy. Go in dry.
Air fry at 375°F for 4 minutes, then flip each shrimp and cook for another 4 minutes. Total cook time: 8 minutes. Check at the 7-minute mark — the batter should be golden and the coating should feel set when you tap it lightly with tongs.
