Protein Cookie Dough (Edible, Gluten-Free)

This edible protein cookie dough is a no-bake, eggless treat made with protein powder, almond flour, and peanut butter. Each serving has 21 grams of protein and very little added sugar, and you can eat it by the spoonful or roll it into bites.

Ingredients

  • 2 scoops vanilla protein powder 2/3 cup
  • 1 cup almond flour
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup sugar-free maple syrup can use liquid sugar free sweetener
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ¼ cup natural peanut butter
  • ½ cup dark chocolate chips

Instructions

  • In a medium size bowl, whisk together the vanilla protein powder, almond flour, cinnamon, and a pinch of salt.
  • To the same bowl, add the maple syrup, almond milk, and vanilla extract. In a separate small bowl, heat the peanut butter in the microwave until soft and runny, then add to the dry mixture.
  • If the mixture is too dry (this will depend on your protein powder), you can add a bit more non-dairy milk.
  • Fold in chocolate chips and eat by the spoonful, or roll into little bites for later. Enjoy!

Notes

Adjust the texture – Add the almond milk a tablespoon at a time until the dough is soft but holds together.
Storage – Store in an airtight container in the fridge for up to 1 week or roll into bites and store in the freezer for up to 1 month. Thaw cookie dough bites 10 minutes before eating.
