Ingredients

  • 300 g macaroni of choice
  • 1 cup cottage cheese
  • 1 ½ cups shredded cheddar cheese
  • 1 cup milk
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Boil macaroni in salted water according to package directions. Cook until al dente. Drain and set aside.
  • In a blender combine the cottage cheese, shredded cheddar cheese, milk, cornstarch, salt and black pepper. Blend until smooth and creamy.
  • Pour the blended cheese mixture into a saucepan over medium heat. Stir continuously until the sauce thickens and becomes creamy.
  • Add the cooked macaroni to the saucepan. Stir to coat all the pasta evenly with the cheese sauce.
  • Serve warm and enjoy a high protein twist in classic Mac and cheese!
