Ingredients

  • ½ cup pumpkin puree
  • ½ cup peanut butter
  • cup maple syrup
  • 1 tsp vanilla extract
  • 1 ½ cups gluten-free rolled oats
  • 2 scoops vanilla protein powder 30g/scoop
  • 2 tsp pumpkin pie spice
  • cup mini white chocolate chips

Instructions

  • Grab a large mixing bowl and toss in the pumpkin puree, peanut butter, maple syrup, and vanilla extract. Mix well.
  • In a separate bowl add the oats, protein powder, and pumpkin pie spice. Stir until combined.
  • Add the dry ingredients to the wet ingredients and mix until everything is combined and looking like a dough. It will be sticky!
  • Add in the white chocolate chips and mix again.
  • Scoop out about a tablespoon of the mixture and roll it into bite-sized balls.
  • Pop your energy balls into the fridge for at least 30 minutes to 1 hour to firm up. You can roll them out again after the dough has firmed up a bit for more well rounded balls. After that, they’re good to go anytime you need a snack or just a little taste of fall.
