Ingredients

  • 1 banana
  • ½ tsp vanilla extract
  • 1 egg
  • cup quick oats
  • ½ tsp cinnamon
  • pinch of salt

Instructions

  • In a small bowl, mash the ripe banana until smooth, then add in vanilla extract. Crack the egg into the bowl with the mashed banana and beat them together until well combined. Then add in the oats, cinnamon, salt and combine everything well.
  • Add oat mixture to a non-stick frying pan and cook over medium heat using a heat-safe spatula until it becomes a scrambled egg consistency. The egg will cook and create a creamy, custardy texture with the oats. This takes about 2-3 minutes. Flip the oats, and break them apart as you would scarmbled eggs.
  • Spoon your scrambled oats into bowls and top with your favorite goodies. Fresh fruit, plain greek yogurt, nuts, seeds, or a drizzle of honey—go wild!
