Scrambled Oats Recipe (Viral High-Protein Breakfast)

Scrambled oats are the viral TikTok breakfast that cooks like scrambled eggs and tastes like warm soft granola. Made with rolled oats, mashed banana, and an egg in about 10 minutes, with around 10g of protein.

Ingredients

  • 1 banana
  • ½ tsp vanilla extract
  • 1 egg
  • cup rolled oats
  • ½ tsp cinnamon
  • Pinch of salt

Instructions

  • In a small bowl, mash the ripe banana until smooth, then add in vanilla extract. Crack the egg into the bowl with the mashed banana and beat them together until well combined. Then add in the oats, cinnamon, salt and combine everything well.
  • Add oat mixture to a non-stick frying pan and cook over medium-low heat using a heat-safe spatula until it becomes a scrambled egg consistency. The egg will cook and create a creamy, custardy texture with the oats. Let it set, about 4–5 minutes or until the bottom is golden and crisp, then flip and break apart as you would scrambled eggs.
  • Spoon your scrambled oats into bowls and top with your favorite goodies. Fresh fruit, plain greek yogurt, nuts, seeds, or a drizzle of honey — go wild!

Notes

Grease Your Pan – Use a non-stick pan and grease it pan well so the scrambled oats don't stick.
Storage – These are best eaten fresh, but leftovers will keep in an airtight container in the fridge for up to 3 days. Reheat in a dry skillet over medium-low or in the microwave for 30-60 seconds, adding a splash of milk if they've dried out. 
Egg-Free Option – Use a flax egg (1 tbsp ground flaxseed with 3 tbsp water, rested 5 minutes) or a spoonful of yogurt in place of the egg.
