Ingredients

  • ¼ cup gluten-free all purpose flour
  • ¼ tsp baking powder
  • 3 tbsp plain greek yogurt
  • Coconut oil spray
  • 2 tbsp white sugar
  • 1.5 tsp cinnamon

Instructions

  • Preheat your oven or air fryer to 350 degrees F (175 degrees C).
  • In a small bowl, whisk together the flour and baking powder.
  • Add the greek yogurt to the bowl, stirring until a soft dough forms. You can use your hands.
  • In a separate bowl, mix together the granulated sugar and cinnamon.
  • On a floured surface, roll out the dough into a narrow rectangle. Keep in mind the width of the dough, which you need to fit into your oven-safe ramekin.
  • Spray the coconut oil spray over the surface of the dough.
  • Sprinkle the brown sugar and cinnamon mixture over the dough.
  • Roll up the dough tightly, starting from the long edge.
  • Place in a greased ramekin or oven-safe dish.
  • Bake the cinnamon roll for 12-15 minutes, or until the dough is golden brown.
  • Allow the cinnamon roll to cool for a few minutes before serving. Can add cream cheese frosting to it if desired.
