Slow Cooker Chicken Gnocchi Soup (Olive Garden Recipe)

- 2-3 chicken breasts
- 3 large carrots
- ½ medium yellow onion
- 3 ribs celery
- ½ tsp paprika
- ½ tsp red pepper flakes
- 1 tsp italian seasoning
- 1 cube chicken bouillon
- 2-3 garlic cloves finely chopped
- 4 cups chicken broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp cornstarch
- ¾ cup heavy cream
- 2 cups cauliflower gnocchi
- 2 large handfuls spinach
- ⅓ cup grated parmesan
Add the chicken breasts, carrots, onion, celery, paprika, red pepper flakes (if using), Italian seasoning, bouillon, garlic, and chicken broth to your slow cooker. Season generously with salt and pepper.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.
Remove the chicken and shred with two forks, then return the shredded chicken to the slow cooker.
Whisk the cornstarch with the heavy cream, to make a slurry, then stir it into the soup.
Add the gnocchi and cook on high for another 60 minutes, or until the gnocchi are soft and the soup has thickened. Then add in the spinach and parmesan.
Taste and adjust seasoning as needed. Serve hot, garnished with parmesan and crusty bread.
