Sugar Cookie Overnight Oats (Easy Protein Recipe)

Ingredients

FOR OATS

  • ½ cup gluten-free rolled oats
  • 1 tsp chia seeds
  • ½ scoop Sugar Cookie PEScience protein powder can use code BAILEY for $$ off
  • ½ cup unsweetened almond milk

WHITE CHOCOLATE GANACHE (optional)

  • 2 tbsp white chocolate chips
  • cup plain greek yogurt
  • 1 tbsp rainbow sprinkles

Instructions

  • Add the oats, chia seeds, vanilla protein powder and almond milk to a bowl or jar. Stir well and refrigerate while you get ganache/toppings ready. Can add sprinkles as well if desired.
  • In a separate small bowl, microwave white chocolate in 30 second intervals. Mix in with greek yogurt. I used a wire whisk to get rid of clumps.
  • Pour yogurt ganache overtop the oats and add back to refrigerator for 4 hours minimum, preferably overnight to set.
  • In the morning, top with more sprinkles and enjoy!

Notes

Can use vanilla protein powder instead and add 1/8 tsp of almond extract for the sugar cookie flavor.
To save on calories, omit the white chocolate ganache topping. It's still amazing without it!
