- 1 cup gluten-free bread crumbs
- 2 tbsp minced fresh garlic
- 2 tbsp Italian seasoning
- 1 tbsp onion powder
- 1 tbsp paprika
- Sea salt and black pepper
- ¾ cup unsweetened almond milk
- 2 lbs lean ground beef
- 2 tbsp sugar-free ketchup
- 2 tbsp mustard
- 2 large eggs
In a small bowl, soak your gluten-free breadcrumbs and spices in unsweetened almond milk for about 5-10 minutes. This step is the secret sauce for keeping your meatballs extra moist and soft.
In a large bowl, combine the soaked breadcrumbs, ground beef, sugar-free ketchup, and mustard. Crack in the eggs and mix everything until well combined.
