Ingredients

  • 2 slices sourdough bread
  • 2 tbsp vegan butter
  • 3 slices plant-based mozzarella slices
  • 3 slices plant-based cheddar slices
  • 2 tbsp plant-based mozzarella shreds

Instructions

  • Start by slicing or shredding your preferred vegan cheese if it isn't already pre-sliced. The melty, gooey cheese is the heart of any grilled cheese sandwich.
  • Take two slices of bread and spread a thin layer of vegan butter each side of each slice. If desired, sprinkle a pinch of garlic powder, onion powder, salt, and black pepper on top of the butter.
  • Preheat a large nonstick skillet, cast-iron skillet, or a griddle over medium low heat or medium heat. Lightly toast the bread on each side for 1-2 minutes.
  • Place a generous amount of vegan cheese on one side of bread. If you want to add any optional ingredients like sliced tomatoes or vegan bacon bits, now is the time to do so. Top it off with the other slice of bread to create a sandwich.
  • Carefully transfer your assembled sandwich to the hot pan or griddle. Cook each side until it's golden brown and crispy, typically about 2-3 minutes per side or until cheese melts through. I like to cover my pan to get the cheese nice and melty.
  • Once both sides are beautifully browned and the cheese is gooey, remove the sandwich from the pan. Let it cool for a moment, then cut it in half on a cutting board and serve it hot.
  • If you love dipping your grilled cheese, mix equal parts ketchup and vegan mayonnaise, then add a dash of sriracha for a tangy and slightly spicy dip. Alternatively you can also serve with a bowl of tomato soup.
