Viral Cucumber Salad Jar with Smoked Salmon

This viral cucumber salad jar layers crisp cucumber, smoked salmon, cream cheese, and everything bagel seasoning. A naturally gluten-free lunch with 22g protein.

Ingredients

  • 1 whole cucumber
  • 3 tbsp red onion finely chopped
  • 2 tbsp herb and garlic cream cheese
  • 75 g smoked salmon approx but can add more or less
  • 2 tbsp capers
  • 1 tbsp fresh dill
  • 2 tbsp Everything But The Bagel Seasoning
  • Salt + black pepper to taste
  • 2 tsp chili onion crunch optional

Instructions

  • Grab a mason jar, tupperware container, or any glass jar you have on hand. Using a mandoline blade, slice the entire cucumber thinly.
  • Start by layering the cucumber slices at the bottom of the jar. Next, add the thinly sliced red onion.
  • Add a generous layer of herb and garlic cream cheese over the onions. Then lay down your smoked salmon slices, capers, and fresh dill.
  • Finally, give it a good sprinkle of Everything but the Bagel seasoning, salt, and black pepper. You can add the chili onion crunch if desired here as well.
  • Give the jar a good shake to mix everything together.
  • When you’re ready to eat, just grab a fork and dig in. If you’re taking it on the go, this salad is super portable, and the jar keeps everything fresh until you’re ready to enjoy it.

Notes

Storage - This is best served the day you make it. If you have leftovers, keep them sealed in the jar in the fridge for up to 2 days, but the cucumbers will release water and soften the longer they sit. 
Soften the Cream Cheese - Bring the cream cheese to room temperature to help it soften and distribute evenly. Cold cream cheese will clump together.
Slicing the Cucumber - Slice the cucumber thinly into even slices using a mandoline or sharp knife. 
Adjust the Salt - Everything Bagel seasoning and smoked salmon can be salty, so taste the salad before adding additional salt.
