- 1 can light coconut milk
- 3 tbsp red curry paste
- 2 tbsp soy sauce
- 1 tbsp minced garlic
- 2 tsp sesame oil
- 2 tsp fish sauce
- ½ yellow onion chopped
- 3 cups chopped bok choy
- 15-20 frozen dumplings
- ¼ cup chopped cilantro
- 1 tbsp sesame seeds
- Chili onion crisp
Preheat the oven - Set the oven to 375°F to preheat while you prepare the dish.
Prepare the curry broth - In a 9×9-inch baking dish, combine the coconut milk, red curry paste, garlic, soy sauce, fish sauce, and sesame oil. Whisk until smooth and the curry paste is fully incorporated.
Add the onions and bok choy - Stir in the boy choy and onions, ensuring everything is evenly coated in the curry mixture and distributed across the base of the dish.
Arrange the dumplings - Place the frozen dumplings in the dish, pinched-side down. Spoon some of the broth over each dumpling to lightly coat the tops.
Bake covered - Cover the dish with a lid or tightly with foil and bake for 15–20 minutes, or until the dumplings are tender and fully cooked through.
Garnish and serve - Remove from the oven and top with chili crisp, chopped cilantro, sliced green onions, and sesame seeds before serving.
