Ingredients

  • 1 ½ cups shredded cheddar cheese
  • 8 slices of pickles
  • 1 tbsp mustard
  • 1 lettuce leaf
  • 2 tomato slices
  • Red onion
  • 3 slices deli turkey
  • ¼ medium avocado
  • 2 tbsp pepperoncini peppers or banana peppers
  • Salt + black pepper

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Pat the pickle slices very dry with paper towels. This step is key to keeping your sandwich crispy, not soggy.
  • On the parchment-lined baking sheet, sprinkle a thin layer of grated cheddar cheese into two rectangles. These will be the “bread” for your sandwich.
  • Arrange four pickle slices tightly together on top of each cheese rectangle.
  • Sprinkle another thin layer of cheese over the pickles.
  • Bake for 20 to 25 minutes or until the cheese is lightly golden and crispy. Watch closely, as oven times can vary.
  • Remove from the oven and let cool for 10 minutes. This helps the cheese firm up, making it easier to handle.
  • Spread mustard or spicy mayo on one side of each cheesy rectangle. Layer with microgreens or lettuce, turkey, tomato slices, and red onion if using.
  • Carefully fold or sandwich the two halves together.
