- 15 large medjool dates
- ⅓ cup peanut butter for protein version mix together 1/4 cup peanut butter powder, 1 scoop peanut butter protein powder, and 1/3 cup unsweetened almond milk
- ¾ cup white chocolate chips
- 1 tsp coconut oil
- ¼ cup coconut shreds
Roll Out the Dates – Remove the pits from the dates, then place them all cut side down. Using a rolling pin, roll them out between two pieces of parchment paper until they form a flat, sticky layer. You want them compact so they hold together.
Add the Peanut Butter Layer – Spread peanut butter evenly over the date layer. If using the high-protein option, mix PB Fit, peanut butter protein powder, and almond milk before spreading. Then add to freezer for 5 minutes while you prepare the chocolate layer.
Melt the White Chocolate – In a microwave or double boiler, melt white chocolate chips with coconut oil until smooth. Stir well, then pour over the peanut butter layer, spreading evenly.
Sprinkle on Coconut – Before the chocolate sets, sprinkle coconut shreds on top for texture and extra flavor.
