Ingredients

  • 1 lb breakfast sausage cooked
  • 2 cups protein pancake mix such as Kodiak
  • 1 ½ cups water
  • ¼ cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat your oven to 400 degrees F (175°C). Lightly grease a 12-cup muffin tin with cooking spray or butter.
  • In a mixing bowl, prepare the pancake batter according to the instructions on the package. Typically, this involves mixing the pancake mix with water until smooth. You can also add an extra scoop of protein powder if desired.
  • Add in the cooked sausage, cheddar cheese and maple syrup to bowl. Mix until combined. Spoon pancake batter into each muffin cup, filling them about 3/4 way up.
  • Place the muffin tin in the preheated oven and bake for 18-23 minutes, or until the McGriddle bites are golden brown and cooked through. You can test for doneness by inserting a toothpick into the center of a muffin – it should come out clean when they're ready.
  • Once baked, remove the muffin tin from the oven and allow the McGriddle bites to cool for a few minutes. Then, carefully remove them from the muffin tin and transfer them to a serving plate. Serve warm with a side of maple syrup for dipping or drizzling if desired.
