- 1 ½ lbs lean ground beef
- 1 medium yellow onion diced
- 2-3 garlic cloves chopped
- 3-4 celery ribs chopped
- 1 cup grated carrots
- ½ cup dill pickles chopped
- 3 cups sharp cheddar cheese
- 1 cup cream cheese
- 1 container organic chicken broth 946ml
- 1.5 tbsp tomato paste
- 2 cups heavy whipping cream
- 2 tsp sea salt
- 1 tsp black pepper
In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
Add chopped onions, minced garlic, celery, carrots, and pickles to the pot. Sauté until the onions are translucent and fragrant.
Add in both cheeses and mix until melted. Pour in the chicken broth, tomato paste, heavy cream and seasoning and bring to a low boil.
Let the soup simmer over medium heat for 10-15 minutes. It will continue to thicken.
