Ingredients

  • 1 ½ lbs lean ground beef
  • 1 medium yellow onion diced
  • 2-3 garlic cloves chopped
  • 3-4 celery ribs chopped
  • 1 cup grated carrots
  • ½ cup dill pickles chopped
  • 3 cups sharp cheddar cheese
  • 1 cup cream cheese
  • 1 container organic chicken broth 946ml
  • 1.5 tbsp tomato paste
  • 2 cups heavy whipping cream
  • 2 tsp sea salt
  • 1 tsp black pepper

Instructions

  • In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add chopped onions, minced garlic, celery, carrots, and pickles to the pot. Sauté until the onions are translucent and fragrant.
  • Add in both cheeses and mix until melted. Pour in the chicken broth, tomato paste, heavy cream and seasoning and bring to a low boil.
  • Let the soup simmer over medium heat for 10-15 minutes. It will continue to thicken.
  • Ladle the Keto Cheeseburger Soup into bowls and get ready to add the finishing touches.
  • Sprinkle crispy bacon bits, extra shredded cheddar cheese, freshly chopped lettuce, and chopped fresh chives over each bowl for that extra burst of flavor.
