MOZZARELLA STICKS
- ¾ cup gluten-free all purpose flour
- 2 eggs
- ⅔ cup breadcrumbs
- ½ tsp cayenne pepper
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- salt + black pepper
- 1 block mozzarella cheese 350g
NASHVILLE HOT SAUCE
- 75 g buffalo sauce
- 3 g butter
- ½ tsp paprika
- ½ tsp cayenne pepper
Set up a dredging station with three bowls: flour in the first, whisked eggs in the second, and panko mixed with cayenne, paprika, garlic powder, onion powder, salt, and pepper in the third.
Dip each mozzarella stick in flour, then egg wash, then flour again, then egg wash again, then breadcrumbs.
Place coated sticks on a baking sheet and put them in the freezer for at least 1 hour (this keeps the cheese from oozing out too quickly).
Spray mozzarella sticks with cooking oil and air fry at 375°F for 8-12 minutes, flipping halfway, until golden and crispy. Keep a close eye near the end so the cheese doesn’t escape.
While the mozzarella sticks are cooking, make the nashville hot sauce by combining your hot sauce, brown sugar substitute, butter, paprika, and cayenne pepper.
Once the mozza sticks are golden brown and crunchy, coat them in the nashville sauce and serve hot with ranch, blue cheese, or more hot sauce for dipping.
