Ingredients

  • 1 tub plain greek yogurt 750g
  • 15 biscoff cookies
  • 2-3 tbsp calorie-free powdered sugar Truvia brand has 0 calories but you can use sweetener of choice
  • 1 tsp vanilla extract

Instructions

  • Mix together the Greek yogurt, powdered sugar, and vanilla extract until smooth. Can do this straight into the yogurt tub or use a smaller amount in a separate container.
  • Press Biscoff cookies gently into the yogurt, spacing them evenly across the surface.
  • Cover and refrigerate overnight or until chilled and set, allowing the cookies to soften.
  • Scoop through the cookies, and enjoy.
