Viral Smashed Date S'mores

Smashed date s'mores layer flattened Medjool dates with marshmallow fluff, a gluten-free graham cracker, and melted chocolate. No bake and ready in 15 minutes.

Ingredients

  • 9 medjool dates
  • ¼ cup marshmallow fluff
  • 9 Simple Mills sweet thins or graham crackers
  • cup dark chocolate chips
  • 1 tsp coconut oil
  • crushed sweet thins for topping

Instructions

  • Line a sheet pan with parchment. Do this first. The dates are sticky and you'll want somewhere to put them the second they're smashed. Then pit the dates. Slice each one lengthwise and pull the pit out. Don't cut all the way through, just open it up.
  • Smash them flat. Lay a second piece of parchment over the dates and press down with the bottom of a glass or a mug until each one is a flat round disc. Keep them thick enough to lift off the paper without tearing.
  • Add the fluff. Spoon a small amount onto the center of each smashed date. Go light. Too much and it squeezes out the sides when you press the cracker on.
  • Press on the cracker. One Sweet Thin per date, pushed gently into the fluff so it sticks.
  • Melt the chocolate. Chocolate chips and coconut oil in a microwave-safe bowl, 30 seconds at a time, stirring between each round until smooth. Let it sit for a minute before you pour, because chocolate that's screaming hot will melt the fluff right off the date.
  • Drizzle and top. Spoon the melted chocolate over each one, covering as much of the cracker as you can, then sprinkle crushed Sweet Thins over the top while the chocolate is still wet so they stick.
  • Freeze for 10 minutes. Keep the tray flat so the chocolate doesn't run to one side. They're done when the shell is firm.
