Viral Smashed Date S’mores (No Bake, Gluten Free)
Smashed date s’mores layer flattened Medjool dates with marshmallow fluff, a graham cracker crunch, and melted chocolate. No campfire, no oven, and they set in the freezer in about 15 minutes.

I’ve made these three times in the last week and the tray keeps disappearing before I get a photo.
Smashed date s’mores are a no bake dessert made by pressing pitted Medjool dates flat, layering them with marshmallow fluff and a graham cracker, then covering the whole thing in melted chocolate and freezing until the chocolate sets hard. That is the full recipe. Five ingredients, one sheet pan, no oven.
The date is doing the work here. Once you smash it flat it turns into a sticky caramel base that grips everything you put on top of it, and then you get fluff, crunch, and a chocolate shell that CRACKS when you bite it.
I use Simple Mills Sweet Thins instead of regular grahams so mine stay gluten free, and the coconut oil stirred into the melted chocolate is the reason that shell snaps instead of smearing.
If you’ve made my smashed dates with peanut butter or my date bark, this is the same energy in s’mores form.

Why You’ll Love These Smashed Date S’mores
- Naturally gluten free. Swap the graham crackers for Simple Mills Sweet Thins and the whole thing is gluten free without tasting like a compromise.
- No bake, no campfire. Everything happens on a sheet pan and the freezer does the setting. Fifteen minutes start to finish.
- They freeze beautifully. Make a tray on Sunday, eat one at 8pm on a Thursday, still good.
Ingredients You’ll Need
- Medjool dates โ the big soft ones, not the small dry ones. Medjools smash into a flat disc without tearing and taste like caramel on their own, which is why this recipe doesn’t need any added sweetener.
- Marshmallow fluff โ spreadable, so it goes on cold and stays put under the cracker. A whole marshmallow won’t stick to the date the same way.
- Simple Mills Sweet Thins โ these are my gluten-free graham cracker stand-in and they’re already the right size, so no breaking pieces to fit. Honey Cinnamon is the flavor closest to a classic graham.
- Chocolate chips โ semi-sweet or dark. The dates and the fluff are both sweet, so a darker chocolate keeps the whole bite from going one-note.
- Coconut oil โ a small amount melted into the chocolate. This thins it just enough to drizzle cleanly and gives you a shell that cracks instead of smudging on your fingers.

How To Make Smashed Date S’mores
- Line a sheet pan with parchment. Do this first. The dates are sticky and you’ll want somewhere to put them the second they’re smashed.
- Pit the dates. Slice each one lengthwise and pull the pit out. Don’t cut all the way through, just open it up.
- Smash them flat. Lay a second piece of parchment over the dates and press down with the bottom of a glass or a mug until each one is a flat round disc. Keep them thick enough to lift off the paper without tearing.
- Add the fluff. Spoon a small amount onto the center of each smashed date. Go light. Too much and it squeezes out the sides when you press the cracker on.
- Press on the cracker. One Sweet Thin per date, pushed gently into the fluff so it sticks.
- Melt the chocolate. Chocolate chips and coconut oil in a microwave-safe bowl, 30 seconds at a time, stirring between each round until smooth. Let it sit for a minute before you pour, because chocolate that’s screaming hot will melt the fluff right off the date.
- Drizzle and top. Spoon the melted chocolate over each one, covering as much of the cracker as you can, then sprinkle crushed Sweet Thins over the top while the chocolate is still wet so they stick.
- Freeze for 15 minutes. Keep the tray flat so the chocolate doesn’t run to one side. They’re done when the shell is firm.

How To Store Smashed Date S’mores
Keep them in an airtight container in the fridge for up to 5 days with a piece of parchment between the layers so the chocolate doesn’t fuse together. The cracker softens a little each day, so the crunch is best in the first two.
For longer, freeze them in a single layer until solid, then move them to a freezer bag for up to 3 months. I eat them straight out of the freezer because the date goes chewy and the chocolate snaps harder, but if you want them soft, leave them on the counter for 5 minutes first.

Smashed Date S’mores FAQ
What are smashed date s’mores? Smashed date s’mores are a no bake dessert made by pressing pitted Medjool dates flat and layering them with marshmallow fluff, a graham cracker or gluten-free cracker, and melted chocolate, then chilling until the chocolate sets. The date replaces both the chocolate bar and the added sugar in a traditional s’more.
Are smashed date s’mores gluten free? They can be. Regular graham crackers contain wheat, so use a certified gluten-free cracker like Simple Mills Sweet Thins and check the label on your marshmallow fluff and chocolate chips. Made that way, the whole recipe is gluten free.
What kind of dates work best? Medjool. They’re bigger, softer, and higher in moisture than Deglet Noor or other varieties, which means they flatten into a proper disc instead of cracking apart. Smaller dates will work in a pinch but you’ll get a much thinner base.
Why are my dates hard to smash? They’re too cold or too dry. Let them sit at room temperature for 10 to 15 minutes first. If they’re still stiff, soak them in warm water for 5 minutes, then pat them completely dry before you smash them or the chocolate will slide right off.
Can I use regular marshmallows instead of marshmallow fluff? Fluff works better here because it spreads cold and holds the cracker in place. A whole marshmallow sits on top of the date without sticking to it, so the layers slide apart when you bite in. If fluff is all you can’t find, a toasted marshmallow pressed down while it’s still warm is the closest workaround.
Can I use graham crackers instead of Sweet Thins? Yes, if you don’t need this gluten free. Break full sheets into pieces roughly the size of a smashed date. Honey or cinnamon grahams taste closest to the original.
