Ingredients 

FOR SUGAR COOKIES

  • 3 cups gluten free flour I used Bob's Red Mill
  • 2 tsp baking powder
  • ยฝ cup Swerve Sweetie
  • 1 cup butter organic grass-fed
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp coconut milk

FOR FROSTING

  • ยฝ cup butter organic grass-fed
  • 2 cups Swerve Sweetie
  • ยฝ cup collagen
  • 4 tbsp coconut milk
  • ยฝ tsp vanilla extract

Instructions

  • Preheat oven to 350F.
  • In a medium mixing bowl combine Bobโ€™s Red Mill Gluten-Free flour and baking powder. Set aside.
  • Cut the chilled butter into cubes.ย In a stand mixture fitted with the paddle attachment, combine butter and swerve. Mix until well combined.ย 
  • Add the egg, vanilla extract, coconut milk and continue mixing until well incorporated.ย Slowly add the flour mixture and mix until dough forms.ย 
  • Prepare a rolling surface by spreading a thin layer of flour.ย Form the dough into a large ball and place on rolling surface. Roll the dough until itโ€™s about 1/4 inch thick.ย 
  • Cut into shapes, place on parchment lined baking sheet, and bake for 9-12 minutes.ย 
  • For the frosting – Beat room temperate organic grass-fed butter until light and fluffy. Add Swerve, collagen coconut milk and vanilla and mix well.ย
