Strawberry cheesecake overnight oats are a no-cook breakfast made by mixing oats, chia seeds, protein powder, almond milk, and strawberry jam in a jar, then layering with fresh strawberries, crushed graham wafers, and a white chocolateโ€“cream cheeseโ€“Greek yogurt ganache. The strawberry-cheesecake protein powder, real strawberries, and creamy ganache topping mimic the flavor of a slice of strawberry cheesecake.

The white chocolate ganache topping is what takes this from “strawberry oats” to “strawberry cheesecake.” Melted white chocolate whisked into Greek yogurt and cream cheese sets thick overnight, exactly like cheesecake filling, with the strawberries and graham wafers layered through.

For the oats:

  • Old-fashioned rolled oats โ€” best texture for overnight oats. Quick oats work but get softer. Steel-cut won’t soften without cooking. Use certified gluten-free if needed.
  • Unsweetened almond milk โ€” neutral flavor. Oat, cashew, coconut, soy, or regular milk all work.
  • Chia seeds โ€” absorb liquid and thicken the oats overnight. Flax seeds work as a 1:1 swap.
  • Strawberry cheesecake protein powder โ€” I use PEScience Strawberry Cheesecake (code BAILEY saves you). Vanilla protein powder works as a swap โ€” you’ll just rely more on the cream cheese and fresh strawberries for the cheesecake flavor.
  • Strawberry jam โ€” adds sweetness and strawberry flavor through the oats. You can also cook 2 fresh strawberries with a teaspoon of water until soft, then mash with a fork as a homemade alternative.

For the layer:

  • Fresh strawberries โ€” chopped. Frozen work too but the texture is slightly softer.
  • Graham wafers โ€” broken into pieces, not crushed into crumbs. Bigger pieces hold their crunch better overnight. Gluten-free graham crackers work as a swap.

White chocolate cheesecake ganache:

  • White chocolate chips โ€” Enjoy Life Foods or a baking bar melts smoothest. Cheap chocolate chips clump more.
  • Plain Greek yogurt โ€” pushes protein up and gives the topping a tangy cheesecake feel. Full-fat is creamiest; non-fat is leaner.
  • Cream cheese โ€” bring to room temperature so it whisks in smoothly. Light cream cheese works.

How to Make Strawberry Cheesecake Overnight Oats

  1. Mix the oat base. Add oats, chia seeds, protein powder, almond milk, and strawberry jam to a bowl or mason jar. Stir well until the protein powder dissolves.
  2. Refrigerate while you prep the topping (about 5 minutes).
  3. Chop the strawberries and break the graham wafer into pieces.
  4. Make the cheesecake ganache. Microwave the white chocolate chips in 30-second intervals until just melted. Important: before whisking in the Greek yogurt and cream cheese, warm them slightly in the microwave (15-20 seconds). Cold yogurt or cold cream cheese + warm chocolate seizes into clumps. Warmed = smooth mix.
  5. Layer everything. Remove the oats from the fridge. Layer the chopped strawberries and graham wafer pieces over the oats. Pour the ganache on top.
  6. Refrigerate overnight (or at least 4 hours) to fully set.
  7. In the morning โ€” top with more fresh strawberries and graham wafer pieces. Eat cold straight from the fridge.

Tips for the Best Texture

  1. Warm the Greek yogurt AND cream cheese before mixing with melted chocolate. This is the #1 reason ganache fails โ€” cold dairy + warm chocolate seizes into a clumpy mess. 15-20 seconds in the microwave fixes it.
  2. Don’t overheat the white chocolate. 30-second intervals in the microwave, max 1 minute total. Overheated chocolate clumps and won’t whisk smooth.
  3. Use Enjoy Life Foods white chocolate or a baking bar. Cheap white chocolate chips have stabilizers that prevent smooth melting.
  4. Add graham wafers as pieces, not crumbs. Pieces hold their crunch overnight; crumbs go soft.
  5. If you want to warm the oats in the morning โ€” remove the ganache first, heat the oats separately, then add the ganache back on top. Microwaving the ganache melts the layer back into the oats and you lose the cheesecake texture.
  6. Use rolled oats, not quick oats. Rolled oats absorb evenly and stay slightly chewy.

  • Strawberry shortcake: Sub crushed shortbread cookies or angel food cake pieces for the graham wafers

  • Fridge: Store sealed jars for up to 3-4 days. The ganache holds beautifully.
  • Meal prep tip: Make 3-4 jars at once. Add fresh strawberries and graham wafer pieces in the morning, not the night before, to keep textures fresh.
  • Best containers: Wide-mouth mason jars (16 oz) show off the layers. Small glass dishes or thrifted small bowls also work โ€” anything airtight and around 1-cup capacity.
  • Save fresh toppings for the morning โ€” fresh strawberries and graham wafers stay crunchier and brighter when added right before eating.
  • Don’t freeze โ€” texture suffers when thawed.

Ingredients 

FOR OATS

  • ยฝ cup certified gluten free oats do not need to use gluten free
  • 1 tsp chia seeds
  • ยฝ scoop PEScience Strawberry Cheesecake protein powder can also sub for vanilla protein powder
  • ยฝ cup unsweetened almond milk
  • 1.5 tbsp strawberry jam or 2 strawberries cooked over medium heat with 1 tsp water to soften – then mush them with fork into “jam”

FOR LAYER

  • 1-2 Fresh strawberries chopped
  • 1 Graham wafer broken into pieces, gf if desired

FOR CHEESECAKE GANACHE

  • โ…“ cup plain greek yogurt
  • 2 tbsp white chocolate chips
  • 1.5 tbsp light cream cheese

Instructions

  • Add all oat ingredients to a bowl or mason jar. Stir well and refrigerate for minimum one hour.
  • Chop up strawberries, and break apart a graham wafer.
  • Microwave white chocolate in intervals of 30 seconds. This should only take 2 rounds. Add in room temperature cream cheese and greek yogurt. I like using a whisk to get rid of lumps and get it nice and creamy.
  • Remove oats from refrigerator, layer the oats with chopped strawberries and graham wafer crumbs. Then pour ganache overtop and put back in fridge overnight to set.
  • In the morning top with more strawberries and graham wafers and grab and go!

    1. Hi Jenn! I actually thrift mine! I prefer doing this because I have 3 different ones and you can choose exactly which shape and size you want. Typically the smaller the better – but not as small as one of those small round ramekins! ๐Ÿ™‚
