Forgot to thaw the wings. Again. Truly iconic behavior from me. But also โ€” it doesn’t matter, because the air fryer doesn’t care.

Frozen chicken wings go straight from the freezer into the air fryer and come out with genuinely crispy skin and juicy meat in under 30 minutes. No oil bath, no thawing, no preheating drama. I’ve made these enough times to nail down exactly what makes them extra crispy every single time โ€” including the one secret ingredient most recipes skip.

I tested this with multiple brands and a few different temperature methods, and this two-stage approach is the one that beats everything else consistently.

Ingredients You’ll Need

  • Frozen chicken wings โ€” bone-in flats and drumettes. Tyson, Kirkland (Costco), or any raw frozen wings work perfectly. If wings are frozen together in a block, separate them during the first stage of cooking when they’ve thawed enough to pull apart.
  • Baking powder โ€” the secret to genuinely crispy skin. Baking powder raises the pH of the chicken skin which draws moisture to the surface where it evaporates โ€” the result is a dryer, crispier skin without any additional oil. Use baking powder, not baking soda. Baking soda will leave a bitter, chemical taste on the skin.
  • Garlic powder, paprika, salt, black pepper โ€” the simple seasoning base. Season after the first stage, not before, so the seasoning sticks properly to the thawed skin.
  • Cooking spray โ€” a light spritz after seasoning helps the spices adhere and promotes an even, golden crust.

How to Make Crispy Frozen Chicken Wings In The Air Fryer

This is a two-stage method โ€” low temperature first to thaw without burning the skin, then high temperature to crisp it up. It’s what separates crispy wings from sad, steamed ones.

  1. First stage โ€” thaw and start cooking. Place the frozen chicken wings in the air fryer basket in a single layer. Don’t stack or overlap โ€” airflow is what makes these crispy, not heat alone. Air fry at 360ยฐF for 10โ€“12 minutes. The wings will still look pale at this point โ€” that’s normal.
  2. Drain the liquid. Open the basket and check the bottom of the air fryer โ€” there will likely be liquid that the wings released as they thawed. Carefully drain this liquid out before continuing. This step is critical. If that liquid stays in the basket it creates steam which prevents the skin from crisping up. Skipping this is the most common reason wings come out soggy.
  3. Season the wings. Transfer the thawed wings to a bowl. Toss with baking powder, garlic powder, paprika, salt, and pepper until evenly coated. Return to the air fryer basket in a single layer and spritz lightly with cooking spray.
  4. Second stage โ€” crisping. Air fry at 400ยฐF for 12โ€“15 minutes, flipping halfway through, until the skin is deep golden brown and crispy. The internal temperature should reach 165ยฐF โ€” use a meat thermometer to check the thickest part without touching the bone.
  5. Toss and serve. Transfer to a bowl and toss with your sauce of choice immediately while the wings are hot. Serve with ranch or blue cheese dressing and celery sticks.

The drain step is non-negotiable. Pooled liquid in the bottom of the basket creates steam as the wings cook. Steam = soft skin. Drain it every time.

Cook in a single layer. If your wings don’t all fit, cook in batches. Crowded wings steam each other instead of crisping. Two batches of crispy wings beats one batch of disappointing wings every time.

Baking powder over oil for crispiness. A light spritz of cooking spray is fine, but baking powder is what actually does the work. Don’t skip it and don’t substitute.

Use a meat thermometer. Wings are done when the internal temperature reaches 165ยฐF โ€” the crispy skin is the visual indicator but the thermometer is the safety check.

Sauce Options

Toss the hot wings immediately after air frying in any of these:

  • Buffalo sauce โ€” the classic. Frank’s RedHot tossed with a knob of butter is the real deal. For honey buffalo, whisk Frank’s with equal parts honey and a splash of Worcestershire.
  • BBQ sauce โ€” sweet, smoky, and always a crowd-pleaser. Toss and return to the air fryer for 2 minutes to caramelize the glaze.
  • Garlic parmesan โ€” melted butter, minced garlic, and finely grated Parmesan tossed together. Rich and addictive.
  • Lemon pepper โ€” dry seasoning tossed on immediately after the second cook. Light, zingy, and perfect for summer.
  • Honey garlic โ€” soy sauce, honey, minced garlic, and a touch of sesame oil. Great with a sprinkle of sesame seeds on top.
  • Plain with dipping sauce โ€” ranch or blue cheese. Sometimes simple is the answer.

Variations

  • Pre-seasoned frozen wings โ€” if your frozen wings are already sauced or seasoned, skip the baking powder and seasoning step. Cook at 360ยฐF for 10 minutes, drain, then 400ยฐF for 10โ€“12 minutes.
  • Breaded frozen wings โ€” cook at 400ยฐF for 14โ€“16 minutes, no need to drain or flip. They come with their own coating that crisps directly.
  • Extra crispy โ€” in the last 2 minutes, increase temperature to 430ยฐF if your air fryer allows it. Finishes the skin to a deeper golden brown.

Store leftover wings in an airtight container in the fridge for up to 4 days. To reheat: air fry at 375ยฐF for 3โ€“5 minutes until the skin crisps back up. Do not microwave โ€” it makes the skin rubbery and everything sad. You can also freeze already-cooked wings on a baking sheet until solid, then transfer to a freezer bag for up to 3 months.
