HOW TO MAKE

  1. Preheat your oven to 400 degrees F.
  2. Wash the cherry tomatoes. Place them on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper and garlic powder.
  3. Roast in the preheated oven for about 20-25 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven and let them cool slightly.
  4. While the tomatoes are roasting, toast the sourdough slices. You can do this in a toaster, or for an extra touch, grill them on a grill pan. Once toasted, rub each slice with the halved garlic clove for added flavor.
  5. Arrange the roasted cherry tomatoes on a serving platter. Place the burrata ball in the centre of the tomatoes. Sprinkle chopped fresh basil leaves over the top.
  6. Drizzle generously with extra virgin olive oil and, if you like, a bit of balsamic glaze for a touch of sweetness. Season with a pinch of salt and a good grind of black pepper.
  7. Serve the roasted cherry tomato burrata salad immediately, with the toasted sourdough slices on the side.

TIPS AND TRICKS FOR BEST RESULTS

  • Use Fresh Ingredients: The fresher, the better. This salad shines with high-quality, fresh ingredients.
  • Room Temperature: Let the burrata come to room temperature before using it. This makes it even creamier and more flavorful.
  • Serve Immediately: This salad is best served right after it’s made. The tomatoes and basil will start to wilt if they sit too long.

STORING THE LEFTOVER BURSTY TOMATO BURRATA SALAD

If you have any leftover Bursty Tomato Burrata Salad (though it’s so good, you might not!), here’s how to store it properly:

  1. Separate the Burrata: If possible, remove the burrata from the salad. Burrata can get quite watery when stored with tomatoes, so it’s best to store it separately if you can.
  2. Use Airtight Containers: Place the tomatoes and basil in an airtight container. Store the burrata in a separate airtight container.
  3. Refrigerate: Keep both containers in the refrigerator. The tomatoes and basil will stay fresh for up to 2 days. The burrata can last up to 2-3 days, but it’s best enjoyed as fresh as possible.
  4. Revive the Salad: When you’re ready to eat the leftovers, let the burrata come to room temperature before adding it back to the tomatoes and basil. This will bring back its creamy texture. Give the tomatoes a gentle toss and add a fresh drizzle of olive oil and balsamic glaze if needed.

FAQS

WHAT IS BURRATA?

Burrata is a fresh Italian cheese with a solid mozzarella shell and a creamy center. It’s perfect for adding richness to salads and other dishes.

WHERE CAN I BUY A BALL OF BURRATA?

You can find burrata at most grocery stores, specialty cheese shops, or farmers markets. Trader Joe’s often carries it as well.

CAN I USE FRESH MOZZARELLA BALLS INSTEAD OF BURRATA?

Fresh mozzarella balls can be used, but they lack the creamy center that makes burrata unique. If possible, stick with burrata for that extra creaminess.

Use high-quality extra virgin olive oil for the best flavor. Look for brands that are known for their quality and freshness.
