This gluten free Twix recipe gives you everything you love about the classic candy bar โ buttery shortbread, gooey caramel, and a dark chocolate shell โ made with just 6 wholesome ingredients. Vegan, naturally sweetened, and honestly better than the original.

Twix bars were my weakness growing up. Like, hide-them-from-yourself, eat-three-in-a-row weakness.
So when I started eating gluten-free and cutting back on processed sugar, I knew I had to figure out a homemade version โ and this gluten free Twix recipe is everything.
The shortbread is buttery and crisp, the cashew butter caramel layer is silky and rich, and the dark chocolate shell gives that satisfying snap you absolutely need. I’ve made these at least three times now and they disappear every single time.
Fair warning: you will not be sharing these.

Why You’ll Love This Gluten Free Twix Recipe
Only 6 ingredients. No obscure health food store runs required โ just coconut flour, maple syrup, coconut oil, cashew butter, vanilla, and chocolate chips.
Three iconic layers. Crumbly coconut flour shortbread, silky nut butter caramel, and a thick dark chocolate coating. All the Twix vibes, none of the weird stuff.

Ingredients for Gluten Free Twix Bars
Here’s what you need (exact measurements are in the recipe card at the bottom of this post):
Shortbread layer:
- Coconut flour โ this is important; coconut flour doesn’t substitute 1:1 with other flours, so stick with it for best results
- Pure maple syrup โ or sugar-free maple syrup for a lighter version
- Melted coconut oil
Caramel layer:
- Cashew butter โ creates the smoothest, most neutral caramel flavour; almond butter, peanut butter, sunflower seed butter, or tahini all work but will change the taste slightly
- Pure maple syrup
- Vanilla extract
Chocolate layer:
- Chocolate chips โ dark, semi-sweet, milk, or bittersweet all work; use dairy-free chips to keep these fully vegan

How to Make This Gluten Free Twix Recipe
Step 1: Make the Shortbread
Mix the coconut flour, maple syrup, and melted coconut oil together until a dough forms. Press it evenly into the bottom of a greased pan and bake for 9โ11 minutes at 350ยฐF until just golden. Let it cool completely before adding the caramel โ this is important so the layers don’t bleed together.
Step 2: Make the Caramel Layer
Stir together the cashew butter, maple syrup, and vanilla until smooth and silky. Pour this over the cooled shortbread layer and spread evenly. Place in the fridge for 30 minutes (or the freezer for 15) until the caramel is firm to the touch.
Step 3: Add the Chocolate
Melt the chocolate chips with a small amount of coconut oil in the microwave in 30-second increments, stirring between each. Pour about half of the melted chocolate over the caramel layer and tilt the pan to spread evenly. Refrigerate for 15โ20 minutes until set.
Step 4: Cut and Coat
Once firm, remove from the pan and slice into 8 bars using a sharp knife. Dip each bar into the remaining melted chocolate to fully coat all sides. Place on parchment paper and refrigerate until the chocolate is completely set.
Step 5: Serve
Sprinkle with flaky sea salt if you’re fancy (you are). Eat immediately or store for later โ if they make it that far.

Tips for Perfect Homemade Gluten Free Twix Bars
Cool the shortbread completely. Rushing this step means a melted, messy caramel layer. Give it time.
Use a sharp knife for clean cuts. A warm knife (run it under hot water and dry it) slices through these cleanly without cracking the chocolate.
Don’t skimp on the coconut oil in the chocolate. It’s what gives the coating that smooth, glossy, snappy finish. About 1 tsp per ยฝ cup of chips does the trick.
Chilling between layers = clean, defined layers. Each layer needs to be fully set before you add the next one. Don’t skip the fridge time.
Flaky sea salt on top is not optional. Okay, it is optional. But you’ll be glad you did it.
Vegan & Gluten Free Homemade Twix Bar Recipe
Ingredients
SHORTBREAD LAYER
- โ cup coconut flour
- 3 tbsp maple syrup
- โ cup coconut oil room temperature
CARAMEL LAYER
- โ cup cashew butter melted (you can sub your nut butter of choice – almond butter, peanut butter, or tahini would all work great as well, they may just alter the flavour)
- ยผ cup coconut oil melted
- โ cup maple syrup
- 1 tsp vanilla
CHOCOLATE COATING
- 1 ยผ cup chocolate chips I used dark chocolate chips
- 1 ยฝ tbsp coconut oil melted
Instructions
- Preheat oven to 350F. Grease and line a bread loaf pan.
- In a medium size bowl add coconut flour, maple syrup and coconut oil. Mix until dough forms, use your hands if needed.
- Press dough evenly into the prepared bread loaf pan. Bake for about 9-11 minutes until edges begin to brown. Take out of the oven and let cool completely.
- For the caramel filling, combine the melted cashew butter, melted coconut oil, maple syrup and vanilla. Once the crust is cooled completely, pour the caramel filling over the crust and let cool in the freezer to set before topping with chocolate layer.
- For the chocolate topping, melted the chocolate chips and coconut oil in a bowl in the microwave or over the stove. Once the caramel layer is set, pour about HALF of the chocolate layer over the caramel layer. Put back in freezer to set.
- Once set, slice into 8 bars. Using the remainder of the chocolate coating, dip the bars into the chocolate sauce to fully coat the bars. Transfer onto a cookie cooling rack over a parchment paper lined baking sheet. Put back in the fridge or freezer to set again. Drizzle extra chocolate over the top of bars if you desire and sprinkle with sea salt.
- Store twix bars in an airtight container in the refrigerator for up to two weeks, or in freezer for up to 1-2 months.

What could I use instead of coconut oil? Peanut and three nut allergy.

I actually haven’t tried any substitutions for it myself, but I think vegan or regular butter should work fine if you’re able to consume that! Other than that my only suggestion would be sunflower seed butter but I’m not sure how that would taste!
