How To Make High Protein Biscoff Cheesecake
- Preheat your oven to 350ยฐF.
- Add the cottage cheese, Greek yogurt, protein powder, egg, baking powder, maple syrup, and salt to a high-speed blender. Blend until completely smooth.
- Pour the mixture into two small ramekins or one small oven-safe dish.
- Bake for 25 to 30 minutes for ramekins, or 30 to 35 minutes for a single dish, until the edges are set and the centre still has a slight jiggle.
- Let it cool, then chill in the fridge overnight.
- Warm the Biscoff spread for 10 to 15 seconds, spread it over the top, and crumble a Biscoff cookie on top.
Tips For The Creamiest Protein Cheesecake
- Blend longer than you think. Cottage cheese needs a solid minute or more to go totally smooth, or you will get grainy bites in the finished cheesecake.
- Do not skip the overnight chill. Straight out of the oven, it tastes like baked custard. After a night in the fridge, it firms into real cheesecake.
- Pull it while the centre still jiggles. It keeps setting as it cools, so a fully firm centre in the oven means an overbaked, dry result.
- Use a whey-casein blend, not pure whey. Pure whey bakes out dry and crumbly and will wreck the texture. The casein is what keeps it creamy.

- Freezer: It freezes well for up to 1 month. Wrap it well and thaw overnight in the fridge before eating.
