HOW TO MAKE

  1. Preheat your air fryer to 375 degrees F for about 5 minutes while you assemble the pizza pocket.
  2. Add most of the mozzarella cheese to one tortilla, saving some for the middle & top.
  3. Spread the pizza sauce on the cheese and top with pepperoni slices. Season with salt and black pepper,
  4. Add a very small amount of the cheese before adding the second tortilla on top. This cheese is necessary as it acts as a glue.
  5. Add the remainder of the cheese to the top and sprinkle with italian seasoning and red pepper flakes. I like pinching all sides down with the end of a fork to prevent the sauce and toppings from leaking out.
  6. Air fry in air fryer basket for 5-6 minutes or until golden brown. Cooking time may vary depending on your air fryer.
  7. Let cool for 2-3 minutes and fold in half if desired for the full pizza pocket effect.

HOW TO STORE

1. Cool Completely:

  • Allow the pizza pockets to cool completely at room temperature before storing them. This helps prevent condensation inside the storage container.

2. Airtight Container:

  • Transfer the cooled pizza pockets to an airtight container or a resealable plastic bag. Make sure they are arranged in a single layer or separated by parchment paper to prevent sticking.

3. Refrigeration (Short-Term):

  • If you plan to consume the pizza pockets within a day or two, you can store them in the refrigerator. Place the container in the fridge to keep them fresh.
