You will need the following simple ingredients listed below to make the bakery style muffin (the exact measurements, nutritional information and full recipe are in the printable recipe card at the bottom of the post):
- Olive oil
- Golden Lakanto sweetner – can also use coconut sugar or brown sugar
- Large eggs – I have not tested this recipe with an egg substitute such as flax eggs or a chia egg.
- Pure pumpkin puree – do not mistake this for pumpkin pie filling, they are not the same. Can also use homemade pumpkin puree if desired.
- Vanilla extract
- Gluten-free flour blend – I used 1:1 Bob’s Red Mill, as long as your flour contains xanthan gum it should work fine. The only other gluten-free flours that may work are almond flour, oat flour or cassava flour.
- Baking soda
- Cinnamon
- Pumpkin pie spice
- Salt
- Chocolate chips
- Optional – coconut oil, pumpkin seeds, pure maple syrup, white sugar, cinnamon sugar, coconut milk, other warm fall spices, etc.
DIRECTIONS ON HOW TO MAKE THE MOIST GLUTEN-FREE PUMPKIN MUFFINS
- Preheat oven to 325F. Line muffin tin with muffin liners.
- In a large bowl, cream together the olive oil and sweetener with a hand mixer. Add in the remaining wet ingredients.
- In a separate mixing bowl combine the gluten free flour, baking soda, cinnamon, pumpkin pie spice and salt.
- Mix together the wet and dry ingredients. Then fold in chocolate chips.
- Using an ice cream scoop, scoop pumpkin mixture into muffin pan and bake for 20-25 minutes.
- Let cool on wire rack, then serve this simple recipe warm and enjoy!
STORING THE HEALTHY PUMPKIN MUFFINS

CAN YOU FREEZE PUMPKIN MUFFINS?
Yes, most muffin recipes can go in the freezer – just store them in a ziploc freezer bag. They will stay fresh for about 2 months!
CAN THESE GLUTEN-FREE MUFFINS BE MADE WITH ALL-PUPOSE FLOUR INSTEAD?
Yes absolutely, they may even yield a more fluffy pumpkin muffin! The only reason I don’t bake with all-purpose flour very often is because I am gluten intolerant.
This recipe has not been tested with other gluten free flours, if you do please let me know in the comments!
I would not recommend using coconut flour though as it absorbs liquid so much more. This will result in a very dry muffin.
CAN YOU MAKE THIS EASY RECIPE WITH FRESH PUMPKIN?

CAN I MAKE THESE MUFFINS VEGAN AS WELL?
Yes, you can make vegan pumpkin muffins by substituting eggs with flax eggs or another egg replacer, and using plant-based milk instead of dairy.
SHOULD I USE MUFFIN CUPS OR CAN I BAKE DIRECTLY INTO THE TIN?
You can do either! Using muffin cups makes cleanup easier and helps prevent sticking, but you can also grease the muffin tin well and bake directly in it.
